After gazing at some sunflowers this morning, I wanted to remind us all of the incredible nutritional offerings sunflower seeds contain. These seeds are a powerhouse of nutrition lending their stores of Vitamin E (helps fight formation of free-radicals), lineolic acid (an essential fatty acid), zinc (helps us recuperate from injuries and fight infection), iron, B-6, protein, and lots of fiber. My favorite sunflower "gift" is that sunflowers aid in the production of seratonin, and so, they are beneficial in relieving stress (who has that, anyway?...) and can help to relieve anxiety.
Then, there is folate which is responsible for the body's formation of DNA and RNA. You'll want to remember that if you are pregnant.
Just another staple in the natural foods pantry. Go get some and munch a bit each day!
